Aims and scope
Advances in Food Science and Technology ISSN 6732-4215 is a fully-online, peer-reviewed scientific journal that covers all aspects of food science and technology. The journal publishes articles on a wide range of subject areas such as basic research in the various sciences associated with food to practical experiments designed to improve technical processes. Subjects range from raw material composition to consumer acceptance, from physical properties to food engineering practices, and from quality assurance and safety to storage, distribution, marketing and use. While the main aim of the Journal is to provide a forum for papers describing the results of original research, review articles are also welcomed.
The journal also accept articles dealing with all branches of the science, technology, packaging and engineering of foods and food products. Special emphasis is given to fundamental and applied research findings that have potential for enhancing product quality, extend shelf life of fresh and processed food products and improve process efficiency. Critical reviews on new perspectives in food handling and processing, innovative and emerging technologies and trends and future research in food products and food industry byproducts are also welcome.
